Gourmet Tofu?

John Scharffenberger doesn't want to just make good tofu; he wants to make tofu so delicious that even meat eaters will make space on their plates for it. "We're at this cusp of people wanting to eat locally, eat fresh, and eat things that are minimally processed," says the CEO of Hodo Soy Beanery. "Tofu fits in really well — as a thing all on its own."
